Turkey Divan - Tonua Brown

I always make this recipe with leftover Thanksgiving turkey, and it's the leftover meal I look forward to the most. The original recipe called for chicken but I almost always use turkey with it.

Prep Time: 20 minutes
Cooking Time: 20-30 minutes
Oven Temperature: 350°F
Serves: 6-8

Ingredients:
  • 1.25 lb fresh broccoli (you may substitute two10-oz. packages of frozen broccoli)
  • 2 cups cooked turkey (you may substitute chicken)
  • 2 cans cream of chicken soup
  • 1 tablespoon lemon juice
  • 1 cup mayonnaise
  • 1/2 cup sharp grated cheddar cheese
  • 1 cup Pepperidge Farm herb seasons stuffing mix
Directions:

Cook broccoli and then arrange in greased baking dish (8" x 12") and top with turkey. Combine soup, mayonnaise and lemon juice; heat until lukewarm. Pour over turkey. Sprinkle cheese over soup mix and top with stuffing mix.

Bake in 350°F oven for 20-30 minutes or until top is brown.

This recipe can be made ahead and refrigerated overnight. Bring to room temperature before baking.
